Pavlova and Anzac Biscuits

What's the story?

The State Library has one cookbook with cuttings and handwritten recipes compiled by Thora Greenwood in its collection. Mrs Greenwood was the wife of Gordon Greenwood, the late Emeritus Professor at the University of Queensland's History Department. Some recipes in the cookbook were used to prepare food for cocktail parties in the History Department.

Let's make them 

Pavlova

Ingredients

4 egg whites

1 cup castor sugar

0.5 cup crystal sugar

1 level dessertspoon cornflour

1 teaspoon lemon juice or pinch cream of tartar

Method

Beat egg whites stiffly then add gradually one cup castor sugar. Lastly fold in crystal sugar. Add cornflour and lemon juice. Shape on waxed paper or oven tray. Cook in slow oven about 1.5 to 2.5 hours.

 

Anzac Biscuits  

Ingredients

1 cup rolled oats

1 cup plain flour

0.75 cup sugar

0.75 cup coconut

1 tablespoon golden syrup

4oz butter

1 teaspoon bicarbonate soda

2 tablespoons boiling water

Method

Mix oats, flour, sugar, coconut together. Melt butter, golden syrup  saucepan. Mix soda with boiling water and add to melted butter. Pour into dry ingredients using fork to mix well. Place teaspoons of mixture on greased trays allowing room for spreading. Bake in a slow oven (325F) for 15-20 minutes. Cool on wire rack.
